This cheesecake recipe is raw and vegan but manages to be super creamy. Inside, we added a combination of three superfoods: raw cacao powder, matcha and barley grass. Being raw enables the cake to keep all the nutrients from superfoods, therefore the cake has antioxidant and detox properties. It boosts the immune system and prevent the aging process of cells. Great taste with the matcha and the cacao, you wont even feel the Barley Grass which is the exact color of matcha. Refreshing and light, this dessert can become very elegant with the nice marbling on the top.



  • 300 g of walnut or pecan nuts

  • 10 dates

  • 40 ml of coconut oil

  • 3 tablespoon of raw cocoa powder

  • pinch of salt




  • 400 g of thick non dairy yogurt

  • 300 g of soaked cashews

  • 50 ml of non dairy milk

  • juice of one lemon

  • one vanilla pod

  • pinch of salt

  • 3 tablespoons of Barley Grass

  • 3 tablespoons of Matcha


Step 1 – make the crust
In a blender, add the pecan nuts and mix alone. When the walnuts are thin enough, add the melted coconut oil, the dates and the raw cocoa powder. Mix it on high intensity, it should become a dough. Add the pinch of salt and mix again. Take the dough out of the blender and knead it a little bit before putting it on a baking paper inside the baking tin by pressing strongly with your finger. Place it in the freezer.
If you want a crunchy crust, we recommend not to blend the walnuts too much and leave big pieces. Without being baked and with dates, the dough will be like an energy dough paste. It can therefore be wise to make it crunchier with big piece of walnuts inside so that it is not too soft.


Step 2 – make the filling
Heat the milk in a pot on low heat. Wash the vanilla pod, cut it two with a knife in order to collect the grains inside. Add the grains and the pod to the milk and stir in gently. Do not let the milk boil and do not heat it over 10 minutes. In the blender, add the soaked cashews inside the blender and mix it intensely, it should be smooth at the end.
Add the non dairy milk (without the vanilla pod but with the grains), the non dairy yogurt, the dates and blend it. Once the consistency is smooth and creamy add the salt and the lemon juice, and mix slowly. Take ⅔ of the preparation and place it in a bowl. With the remaining ⅓ inside the blender, add the matcha and barley grass which are the same color, and mix.


Step 3 – create some nice marbling inside and outside your cake

Take the crust out of the freezer. Have the two fillings, white and green, next to the crust inside bowls with a tablespoon inside each of them and one chopstick on the work surface. Pour some tablespoons of the green filling to cover the crust entirely up to 1 cm. Add some tablespoon of white filling in the center. Like that it will create some natural marble effect inside the cake. When cutting it, you should be able to see some marbling inside.
With the chopstick, trace some curvy lines between the two filings, it is very easy to create great marbles and get something pretty without really knowing what you are doing. Alternate a layer of white filling and a small layer of green filling in the center. For the last layer, cover the cake entirely with the rest of the green filling. Add some tablespoons of the rest of the green filling here and there on the cake. Let the chopstick draw some curvy lines on the cake to make it marbled.

This cake is entirely vegan and healthier than a regular one. Not baking the cake makes it keep the nutrients from the superfood we added inside. The barley grass and the raw cacao can deliver all their benefits. Barley grass is a natural detoxifier and antioxidant while being a complete source of protein.
On the other side, raw cacao is a natural antioxidant as well, it contains theobromine and potassium that help the muscles to relax and prevent fatigue. Matcha has also some detoxifier properties and is a strong antioxidant. It calms the body, boost concentration and is full of fibers. The combination of the three superfoods is perfect since Cacao/Matcha is a mix that works in terms of flavor, and Barley Grass has the exact same color as Matcha.
